I think at some point these will become more user friendly, the Plutus app maybe the first of these which uses blockchain tech and enables transactions to fiat instantly when paying at any NFC reader.
I haven't read too much into Plutus but the concept did catch my interest, I have high hopes for that platform and when I get a little more time I'll be taking a more in depth look.
Bitshares seems more useful than waves with their "smartcoins" using the same tech as the steem-dollar they create decentralized tokens worth a dollar or a yuan or an ounce of gold. Waves will rely on third-parties but it does look like they have some good organization.

I use Bitshares myself in the form of OpenLedger, and can attest that it's a great, easy to use platform once you wrap your head around its special little quirks (for instance, calling tradable assets OPEN.BTC, OPEN.ETH, etc, which is supposed to emphasize the fact that internally all tradables are actually IOUs backed by the underlying asset; which is actually how centralized exchanges operate too, but OpenLedger prides itself on being more transparent about this process). Sadly volume on the platform is rather low, so markets tend to be a bit illiquid, but hopefully this will improve as more people start using it.
I've also used Bitsquare. It's a piece of crap. I would advise you to stay away from it unless you really have no other choice. Trading is awkward and usually a rather drawn out process that can last hours for a single trade in the worst case. It's much more like a digital version of meeting someone in a back alley to quietly swap some goods, rather than what you would typically think of when someone utters the words "cryptocurrency exchange". To be fair, it does have a clean and well thought out UI. But it's got a long way to go before being able to appeal to anyone but the most diehard, paranoid crypto techie.
Steem is powered by the same tech that makes Bitshares the industrial strength blockchain of choice for those wishing to secure their property on a truly legit DEX.
Up and running version 2.0 smooth as butter for over a year now. I'd be willing to bet that the lessons learned from this revolutionary steem experience will find their way back to an even more robust Bitshares in the future, as they are sister chains capable of sharing advancements and features for years to come.
But that's just me, I could be invested in Bitshares... and Steem, for the long haul. Gotta watch out for that confirmation bias. ;)
