Did you know that there are over 45 benefits of lemons? As an entry to @mcw's SciencePic Challenge, we will be sharing with you the science behind lemons and how it can prevent apples from turning brown.

Have you tried cutting up your apples and get frustrated when it begins to turn brown in a few minutes?

你们有试过切开一个苹果然后在几分钟之内看到苹果里面变棕色颜色吗?

Fact: Naturally, apples contain an enzyme called polyphenol oxidase. What are Enzymes? Enzymes is what causes things to age.

事实: 苹果里面有一种酶叫《多酚氧化酶》.

When you cut open an apple, the polyphenol oxidase is released and makes contact with the oxygen in the air. When the polyphenol oxidase meets the oxygen in the air, the apple will turn brown.

当你切开了一个苹果， 多酚氧化酶会遇到空气中的氧气。 这样会让苹果边棕色颜色。

How Do You Prevent Apples from Turning Brown?
The answer is: LEMON!
怎样才会让苹果不变棕色呢?
答案: 柠檬!

Fact: A lemon is filled with Vitamin C which is an ascorbic acid. Lemons also have low pH levels.

事实: 一个柠檬充满了维生素C. 维生素C是个抗坏血酸。柠檬也有低pH值。

When ascorbic acid meets the oxygen in the air, it reacts faster than when oxygen meets polyphenol oxidase. In saying this, it means that if you squeeze a bit of lemon juice onto your cut apples, it will help slow down the process of the apples from turning brown. The low pH levels in a lemon also helps with this process.

当抗坏血酸与空气中的氧气相遇时，其反应速度比氧气遇到多酚氧化酶时要快。这么说， 如果你在苹果上挤一点柠檬汁，就会减缓苹果变褐的过程。柠檬中的低pH值也有助于这个过程。

Try this: cut up an apple in the morning when you're at home and squeeze a bit of lemon juice on it. Take it to work and you will notice that your apples are still white even after 3 hours!

试试看: 早上当你在家时把苹果切成块，挤上一点柠檬汁。带上班或者上学，你会发现，即使3小时后，你的苹果仍然是白色的!

Note: once the ascorbic acid in the lemon is used up, the enzymes in the apple will still be active and the apple will begin to turn brown.

注意: 一旦柠檬中的抗坏血酸用完，苹果中的酶依然活跃，苹果会开始变成棕色。
