Egg and aubergine sandwich...
Just because we eat a sandwich in a casual manner, it doesn't need to be treated casually too.
Egg and aubergine sandwich.
One egg omelette, crisp fried garlic, slices of bread with mayo, chili paste, aubergine disc without skin, fried and a chopped shallot.
The shallot, for crunch, was spread over the surface of the bread, the paste spread inside the omelette, the garlic topped the aubergine and the aubergine went into the omelette and the omelette went inside the bread.
Delicious it was. Wish I had one for myself. Slight chili, somewhat sweet, garlicky, soft and comforting and filling.
I actually hadn't done anything for her lunch and asked her to make herself a mayo sandwich. When I saw her taking that pitiful sandwich away, couldn't let that happen. And so, we have a new sandwich! ;)
