Lentil soup and split peas puree

Today was a healthy lunch day, so we had lentil soup and split peas.

Lentils, along with chickpea, are my favorite legumes.

For the soup I used:

  • one dry onion
  • one piece of garlic
  • one carrot
  • salt
  • oregano
  • one bay leaf
  • olive oil
  • a few tablespoons of homemade tomato sauce

I first boiled the lentils for five minutes, drained and washed them and then boiled them again with all the ingredients together. Keep in mind the onion, garlic and carrot were finely chopped.

For the split peas puree I used

  • one dry onion
  • one green onion
  • one piece of garlic
  • one carrot
  • salt
  • oregano
  • one bay leaf
  • thyme
  • olive oil
  • lemon juice
  • mustard

Again, I boiled the split peas for five minutes and then drained and washed with cold water. Then I sautéed the finely chopped onions for a while, added the split peas, carrot and other ingredients but the lemon juice and let them simmer with a little water. I tasted to check if the split peas was cooked and added water when needed. Once cooked and the water had evaporated, I poured the lemon juice, let the food cool down for a while and then pureed it with my hand blender. @trumpman loved it, I can't say the same for myself though 🤣

Some cucumber and olives for salad and our lunch was ready!
