Guilt Free Dong Bei Style Roast Duck. How Dalian Likes it.
The strip of small restaurants near my home has new Northern Style Roast Duck shop and I love Duck. Eating especially.
I say guilt free because when I had ducks I didn't crave eating them. lol
It was right around lunch time on my way home from work, I knew it would be quick and I expected it to be deliciously fresh; it was all of those things. Great service. This guy is the owner, he was a little too happy I was there and took some photos. haha
I trust this food because it stays under the heat preventing it from going bad like many other places in this area. I can trust it so long as it's not dried out, which it wasn't.
They break it up by hand. Under the plastic gloves are thick wool or cotton to prevent burns. I know it's hot because 10 minutes later I was home feeling the heat. He must have leathery hands from doing this job so much. I could see the steam rising out of it and the smells filled the air. Drooling
Some extra spices to add to the flavour. You can have it pretty spicy if you want.
The skin was crispy and crunchy just the way it's suppose to be and most of the fat had cooked up and dripped off with perfectly tender and moist meat. It's quite different from Hong Kong style roast duck which is more popular in the west.
Well I managed to get a photo with the owner since he got one with me. They say You Can Always Trust Fat Cook.
