INDIAN SWEET DISH- RICE PUDDING (KHEER) RECIPE...!!!

Rice Pudding is a very special and most popular dessert of India which is also known as Kheer. We made Rice Pudding on every Festival as a sweet Dish and It is a very important Dish for Indians.

Rice Pudding is made with Natural Ingredients
Rice Pudding is a rich source of Vitamin C.
It also Contains Vitamin A ,
Calcium ,
Iron ,
Protein,
Carbohydrates,
Vitamin-D,
Vitamin-B
Potassium
Calories, Fat (Do not consume on Daily Basis)

Rice Pudding Ingredients :

1 liter Fat Organic Milk
1/4th cup of Rice (1 cup=250 ml)
Sugar(same quantity of Rice i.e. 1/4th cup of Sugar=1/4th Cup of Rice) or as per requirement
1 pinch Saffron
15-20 Almonds (Blanched and sliced)
12-15 Cashews
1 tablespoon Golden Raisins

Before Making Rice Pudding Just Prepare the following Ingredients :

  • Rinse the Rice till the water runs clears of the starch (clean Rice properly with Water)
  • Soak the Rice in enough water for 30 minutes
  • How to Blanch Almonds : Heat water in a small pan or pot. when the water comes to a boil then switch off the flame and tehn add almonds to it. after that cover it and keep it aside for 30 minutes
    (If you do not want to blanch almonds or you do not have time for this, then you can just crush them but not into too small pieces)

Now here is the Making of Rice Pudding, Lets start it step by step:

Step 1: Heat milk and let it come to a boil, meanwhile drain the rice and keep aside
Step 2: Reduce the flame and add the rice in to the milk.
Step 3: Stir and simmer the milk and let the rice grains cook (Approx 30-35 minutes)
Step 4: Add the Sugar and continue to stir often so that lumps are not formed.
Step 5: Scrape the sides of the pan and add this dried milk into the pan and let the rice pudding gets slightly thicker.
Step 6: Add the almonds (if you have blanched almonds then peel of first and slice them.)
Step 7: Add the Cashews, Saffron and Golden raisins with almonds
Step 8: Mix them well for 1 minute and switch off the flame.

Rice Pudding is ready to eat. You can eat hot rice pudding. You can also eat after making it cold. You can Try both methods.
If you want to eat cold rice pudding then refrigerate it for 45 minutes.
You can store this in refrigerator for 10-12 hours only.
