Zucchini Fries

Ingredients
Zucchini 2pcs
Salt to taste
Black pepper to taste
Parsley 1 tsp
Paprika 1 tsp
Cheddar cheese 100g grated
Eggs 3 whole
Breadcrumbs 100g
Flour 50g
Olive oil 3-4 tbsp

Method
Cut zucchini lengthwise into ⅓ inch thin slices. Put the slices in a bowl. Add salt, pepper and any other seasonings of your choice. Leave marinated zucchini slices for 15-20 minutes.

Combine the grated cheese with parsley, paprika and eggs. Mix all the ingredients well.
Take the breadcrumbs on a plate. Add flour to the breadcrumbs and mix well. Coat zucchini slices with the breadcrumb/flour mix. Then dip these coated slices in the egg/cheese mixture.
Add 3-4 tbsp of olive oil in a pan over medium heat.

When the oil is hot enough, fry the prepared zucchini slices covered, 2-3 at a time (so as not to overcrowd the pan) for 4-5 minutes. Turn and fry covered over low heat for another 5 minutes.
Yummy zucchini fries are ready to serve.
