Sweet Potato Salad - my made-up recipe
Serves 4 
Ingredients:
I good size sweet potato - sprinkled with Pink Himalayan / Celtic Sea salt and cracked black pepper and baked in oven until cooked, yet not mushy (can cool and put together for a cold salad, or use hot sweet potato in the salad)
1 stalk of Kale - sut finely
1 or more sprigs of coriander (also known as cilantro) - cut finely
1/2 red capsicum - diced finely
Toss together in a large bowl.
pour in enough olive oil until it is lightly covered
pour in about juice of one small lemon, or 1/2 large lemon.
Sprink with Celtic sea salt
Mix together
Serve now or place in refrigerator for later.
