Ingredients

For the Dough:

  • 500 g flour
  • 1 packet of dry yeast (or 20 g fresh yeast)
  • 1 tsp sugar
  • 1 tsp salt
  • 250 ml lukewarm water
  • 2 tbsp olive oil

For the Filling:

  • 200 g Sucuk (Turkish garlic sausage), sliced thinly
  • 200 g cheese (e.g., mozzarella or feta), grated or crumbled
  • 1 egg
  • 1 tbsp milk
  • Optional: chopped parsley, red pepper flakes

Instructions

  1. Prepare the Dough:
    • In a small bowl, dissolve the yeast and sugar in lukewarm water. Let it sit for about 5-10 minutes until frothy.
    • In a large mixing bowl, combine the flour and salt. Make a well in the center and add the yeast mixture and olive oil.
    • Knead the dough for about 10 minutes until it becomes smooth and elastic. Cover it with a damp cloth and let it rise in a warm place for about 1 hour, or until doubled in size.
  1. Prepare the Filling:
    • In a bowl, mix the cheese with the egg and milk. Set aside.
  1. Assemble the Pide:
    • Preheat your oven to 220°C (428°F). If you have a pizza stone, place it in the oven to heat up.
    • Punch down the dough and divide it into 4 equal parts. Roll each part into an oval shape, about 20 cm long and 10 cm wide.
    • Spread a thin layer of the cheese mixture along the center of each dough oval. Arrange the slices of Sucuk on top of the cheese. Optionally, sprinkle with chopped parsley and red pepper flakes.
    • Fold the edges of the dough over the filling, pinching the ends to seal.
  1. Bake the Pide:
    • Place the Pide on a baking sheet lined with parchment paper or directly on the pizza stone. Brush the edges with a little beaten egg for a golden finish.
    • Bake in the preheated oven for about 12-15 minutes, or until the dough is golden brown and cooked through.
  1. Serve:
    • Remove the Pide from the oven and let it cool slightly before slicing. Serve warm, optionally garnished with extra parsley.
