The chicken doesn’t require any marinating just a simple homemade cajun spice rub then about 8 minutes on the grill (which will add more flavor), and it’s finished with a perfectly fresh and delicious avocado based salsa – which helps balance out the heat of the chicken.

- 4 (6 oz) Boneless Skinless Chicken Breasts
- ¾ Tsp Paprika
- ½ Tsp Garlic Powder
- ¼ - ½ Tsp Cayenne Pepper, To Taste
- ¼ Tsp Onion Powder
- ¼ Tsp Dried Thyme
- ¼ Tsp Dried Oregano
- Salt And Freshly Ground Black Pepper
- 1 Tbsp Olive Oil
**Avocado Corn Salsa :** * 1 Ear Corn, Grilled Or ¾ Cup Frozen Corn, Thawed * 1 Roma Tomato, Diced * ⅓ Cup Diced Red Or Green Bell Pepper * ½ Avocado, Diced * 3 Tbsp Chopped Red Onion * 2 Tbsp Chopped Cilantro * 1 Tbsp Fresh Lime Juice * 1 Tbsp Olive Oil
