Orange Chicken With Steamed Broccoli

You are looking for a tasty, healthy meal that is quick to make right? Well if so, this is a killer option.

Ingredients

  1. 2lbs skinless chicken breasts or thighs
  2. 2 red bell peppers
  3. green onions
  4. sesame seeds
  5. 1 large broccoli head
  6. 1 large orange
  7. 2 cups white rice
  8. 1/2 cup of orange juice
  9. 1/3 cup of soy sauce
  10. 1/4 cup of rice vinegar
  11. 3 cloves of garlic
  12. 2 tbsp of cornstarch
  13. 2-3 tsp of honey
  14. 1/2 tsp ginger root grated or paste

The Sauce

  • combine ingredients 8-14 and zest of 1/2 of the orange in a bowl and mix until combined. Taste it and see if it needs anything. It's always more about the balance of flavors than the strict proportions.

The Chicken

  • cube up chicken and bell peppers into bite-size pieces (Putting the chicken in the freezer for 20 minutes makes it much easier to slice evenly)

  • in an oiled pan over high heat, cook the chicken through. Try not to agitate the pieces very much to develop some nice carmelization.

  • add the peppers and sauce, cook until peppers are soft and the sauce has thickened to the desirable consistency. Taste for seasoning.

Steamed Broccoli

This is one of the best ways to cook vegetables. They stay greener, lose less crunch, and there is a foolproof way to know when they are done.

  • put 1/2 inch of water in a large pot, bring to a boil

  • break the broccoli head into manageable pieces and place in a steamer basket over the water.

  • Once you can smell the vegetable, you are done to perfection. This is usually about 6 minutes depending on how big the pieces are.

All Together Now

Serve over white rice with chopped green onion and sesame seeds. A slice of orange is always a nice touch and you have one laying about so you might as well right?

I cannot say enough good things about how this turned out. You just have to try it for yourself. If you are looking for an even faster version, I would try using tofu instead of chicken. Just cook the sauce and peppers before adding some extra firm tofu.
