Harvest Grains with Roasted Vegetable Medley

A colorful array of delicious vegetables paired with buttery grains comes together to create this simple yet distinct dish. As the vegetables roast, they develop a sweet, aromatic quality that counters the savory, cheesy grains. This meal comes together in less than 30 minutes and can be altered throughout the year to include seasonal vegetables. Great as a side dish or the main entree at dinner, this versatile, tasty dish is sure to please crowds.

Ingredients:

  • 1 cup of mushrooms
  • 1 cup of carrots
  • 1 clove of garlic
  • 1 small zucchini squash
  • ½ of small Red Onion
  • 1 baby eggplant
  • 1 red bell pepper
  • 1 cups cherry Tomatoes
  • 1 tablespoon Balsamic Oil
  • 2 tablespoons feta cheese
  • ½ cup parmesan cheese, shredded
  • 4 cups vegetable broth (amount will vary depending on selected grains)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 package Harvest Grains (We like these grains from Trader Joe’s which feature couscous, orzo, quinoa, and garbanzo beans; but any similar mix will do. 1 package is 16 ounces)

  1. Preheat oven to 450℉.
  2. Chop mushrooms, carrots, zucchini, onion, bell pepper, and eggplant into desired bite sized shapes. Place chopped vegetables in 13x9 baking pan. Drizzle with olive oil, salt and pepper, stir.
  3. Place peeled garlic clove whole in the corner of the baking pan. Bake vegetables for 15 minutes.
  4. Prepare grains according to package, substitute the water in any instructions with equal parts vegetable broth for additional flavor.
  5. While vegetables are baking, chop tomatoes in half. After the vegetables have been baking for 15 minutes, add tomatoes to veggie mix, drizzle with balsamic oil, stir (be careful not to displace garlic clove in the corner of the pan) , and bake for additional 10 minutes.
  6. When grains are done cooking, add butter and parmesan, stir and set aside.
  7. When vegetables are done roasting, remove garlic clove and set aside. Stir in grains to vegetables.
  8. Chop the garlic into small pieces, The garlic will have a slightly mushy texture and will not chop into uniform pieces. Distribute the garlic evenly throughout the grains and veggies, stir.
  9. Sprinkle the dish with feta and serve.
