Rawkin Rosie's Hot Pepper Vinegar

A Komodo Dragon chilli and some Scotch bonnets combine to make this one hot dang pepper vinegar.

But who is this Rawkin Rosie? I hear you cry. Well not really a person, if you peer closely you will spy a sprig of rosemary in the bottle and this is where this blooming hot vinegar gets its name.

This is very easy to make. Tastes amazing and you will find yourself using it on everything!!

Let's get stuck in.

You will need

1 carrot, finely diced
3 cloves of garlic
Half a small onion finely diced
1 sprig of rosemary
1 and ¾ cups of white wine vinegar
1 teaspoon of sherry vinegar

Plus (of course)

4 hot, hot peppers. Here I have 2 scotch bonnet peppers, 1 yellow jalapeño and 1 red Komodo dragon chilli. Note: I don't often used the new breed of insane peppers but for vinegars I like to include one, it adds that little extra pizazz!!!

To make

Really simple!
Bang your diced onion and carrot into a bottle or jar. Add your whole garlic and sprig of rosemary. Then the peppers.

Before you add the peppers, stab them a couple times with a knife to let the vinegar in to infuse all that hot goodness

Now put in your white wine vinegar and teaspoon of sherry vinegar

Boom there you go!! Now it's best to hide it away for a week so it can properly infuse.

After that it will be all about the awesome flavour and heat. Put it on everything!!

You can also top it up if it's running out and you can do this several times over!!!

Where is the Rawkin come from?
Is it because of being Raw? Kin is like kinda stuffs ?

Rawkin, is slang for rocking, as in rocking good stuff!! Nothing to do with raw but some good guessing!!

What do you usually use this on?

Anything you would normally use vinegar in but fancy a bit of bitey heat. So fries is usually a good starter but apart from that anything remotely salad like gets it and sometimes in a recipe instead of using a little ordinary vinegar I bang this in!

I bet it would make for a delicious salad dressing or lightly sprinkled to make some homemade beef jerky!

I often use it on salad but never thought for a minute for beef jerky!! Great idea!!!
