My nonnas classic Italian brunch dish.... saucy eggs!
My nonna never wasted anything and being Italian there was always left over pasta sauce in her fridge. As a little girl I would visit her regularly (she lived across the road!) and she always kept us kids quiet with this recipe.
Nonnas saucy eggs! (not the real name, its just what we called it)
Step 1.
Distract the chickens with food....
...then check for eggs!

Step 2.
Pick some parsley while you are out there.
Step 3.
Add the left over sauce to a frying pan. When it is heated through break the eggs into the sauce. Place a lid over it and simmer on low heat until the eggs are cooked to your liking.
Step 4.
Garnish with salt, pepper and the fresh parsley. Serve it on a nice thick slice of toast!!
Step 5.
Enjoy the glass of wine while the kids and chickens are quiet!

Thank you!! I really do love my garden and enjoy the rewards it gives me for the time I give to it! Chickens are interesting pets! Do you have a big yard? I let mine free range and they like to get into everything. Its usually me versus the chickens!
