Apple Cinnamon Quinoa Recipe
Have you ever eaten quinoa for breakfast? This is a yummy recipe to try.... :)
Apple Cinnamon Quinoa
2 cups milk
1 cup dry quinoa, well rinsed
1 apple, diced
1 tsp ground cinnamon
2 tbsp maple syrup (or honey)
4 tbsp butter
pinch of salt
1/2 tsp vanilla extract
1/4 cup dried cranberries or currants (optional)
1/4 cup chopped toasted almonds or walnuts (optional)
In a 2-quart saucepan, heat the milk over medium high heat. When the milk is almost boiling, stir in the quinoa, apple, cinnamon, maple syrup, butter and salt.
Reduce heat to low simmer; partially cover and simmer stirring occasionally for 15 minutes or until most of the milk has been absorbed.
Remove from heat. Stir in vanilla, cover tightly, and let sit for 5 minutes.
Fluff with fork and add nuts/cranberries if desired.
