I'm going to make an attempt at documenting step by step instructions for recipes I like and use. This is my first post so any feedback would be greatly appreciated.  I find it easiest to have ingredients at the top of a recipe, then the instructions so that's how I will structure things to start. Ingredients should be listed in the order they are used. This particular recipe is made in an instant pot. It takes about an hour to make between prep and cooking in the instant pot and serves 6.

 Ingredients 

  • 4 tablespoons olive oil 
  • 4 tablespoons butter 
  • 5 cloves garlic, minced
  • 1 red onion, diced
  • 2 carrots, diced
  • 1 zucchini 
  • 1 large handful green beans, cut into 1" pieces
  • 5 tomatoes, diced
  • 3 small red potatoes, cut into cubes
  • 5 oz baby spinach (1 bag), chopped
  • 1 can cannellini beans, drained and rinsed well
  • 1 can dark red kidney beans, drained and rinsed well
  • 1 can garbanzo beans, drained and rinsed well
  • 1 quart (32 fl oz) vegetable broth
  • 1 chunk of parmesan rind
  • 1 tablespoon italian seasoning
  • 1 healthy pinch rosemary
  • 1 healthy pinch salt
  • 1 1/2 cups pasta
  • freshly grated parmesan

 Instructions 

  1. Start out by prepping the ingredients. The garlic, onion, and carrots can be stored together. The zucchini, green beans, tomatoes, potatoes, and spinach can be stored together. I found it best to drain and rinse the beans ahead of time. They can simply be returned to their cans until they are needed. 
  2. Turn the instant pot on to "saute" mode.
  3.  Add the 4 tablespoons of olive oil, butter, garlic, onion, and carrots. Stir ingredients and saute for 3 minutes.
  4. Now turn the instant pot on "keep warm" mode.
  5. Add the zucchini, green beans, potatoes.
  6. Add the spinach.
  7. Add the tomatoes.
  8. Add all of the canned beans.
  9. Add the chunk of parmesan.
  10. Gently stirring each ingredient in. Sprinkle the rosemary and italian seasoning on top. Then pour all of the vegetable broth in. There should be a few inches of room from the rim. 
  11. Place the lid on top in "sealing" mode.
  12. Now set the instant pot on "soup" mode for 30 minutes.
  13. Once soup mode finishes carefully move release to "venting" mode. This will take a while to vent. 
  14. Remove lid and add pasta. You will need to put the instant pot back into "soup" mode and let it cook with the lid off until the pasta is al dente. 
  15. Ladle into a bowl and sprinkle grated parmesan on top.
