Recipe: CHICKEN MEATBALLS WITH BANANA
Chicken Meatballs with Banana
Gluten-free dairy-free soy-free grain-free
I was put on a very restricted diet from my doctor. There was tons of food I wasn't allowed to eat. So with very limited food chOices I created this recipe.
It is so amazing tasting and it doesn't cause me any ibs or other stomach and digestive issues.
Some days I have to be careful with the garlic. Then I just reduce the amount or leave it out. I also like to eat them without the Garlic-Vinaigrette.
Here's the recipe.:
Meatballs:
2 lbs Yams or Sweet Potatoes, peeled and cubed
2 lbs ground Chicken (or Turkey)
1 Banana, mashed
4 tbsp Coconut Flour
3 tbsp Red Onion, finely chopped
1 tbsp fresh Lemon Juice
1 tsp fresh Ginger, grated
2 tbsp fresh Sage, chopped
Salt and Pepper, optional
Coconut Oil
Boil the yams or sweet potatoes in water, strain and mash them.
Mix the rest of the ingredients with the yams or sweet potatoes.
Put some coconut flour on your hands and form meatballs.
Put the coconut oil into a frying pan, heat it up, put the meatballs into the pan and push them down to make them a bit flatter.
Fry them for about 15 minutes on both sides.
Garlic-Vinaigrette
4 Garlic Cloves
2 tbsp fresh Lemon Juice
1 tbsp fresh Orange Juice
1.5 tbsp Vegetable or Chicken Broth
1 tsp fresh Sage, chopped
3 tbsp Olive Oil
Preaheat oven to 300F
Leave the skin on the garlic, put them in a piece of aluminum foil on a sheet pan and sprinkle with some olive oil. Wrap them up with the tin foil and put them for 45 minutes in the oven.
After that peel and mash them with a fork.
Mix the rest of the ingredients with the garlic together and serve with the meatballs.
