Cornmeal with Red Beans Recipe
Maiz Moulu avec dez poiz rouge (Vegan Haitian Cornmeal with Red Beans)
Ingredients
¼ cup of Red Kidney Beans
½ cup of corn meal
1 tbsp. of olive oil
1/3 cup of chopped red pepper
1/3 cup of chopped green pepper
1/4 cup of chopped green onions
1 garlic head, diced
1/8 jalapeno pepper, diced (optional)
½ tsp. of salt
1/3 cup of fresh cilantro
1 Red tomato, diced
2 ½ cups of water
Ingredients
Boil beans on medium heat for 60 minutes or until tender. Heat 1 tbsp. of olive oil in a separate medium-sized pot on medium heat. Sautée all the ingredients, except the cornmeal, for 3-4 minutes. Pour the water that was used to boil the beans into the pot. Once the water boils, add the corn meal and the beans. Reduce heat and simmer for 40-45 minutes. Stir the mixture frequently. Use a grease cover to prevent yourself from being burned and to keep your stove top clean.
