Lazy recipe for tomato and cheese soup
I like to eat more than to cook, but since I still have to cook, I choose simple and quick recipes.
My husband loves tomato soup. Also, as I am a beetroot, and the son is a tarator, he can eat him all day. Therefore, I make a big pot, in the hope that we will have enough of it for at least two days)
Today I will make soup from what was found in the refrigerator, but there were no fresh tomatoes there. Probably there was no one to go to the market.
Therefore, I took:
Cooking time: 35 minutes
Servings Per Container: 9-10
Ingredients:
- Tomato puree from browned tomatoes - two bottles of 680 gr.
- Peeled and diced tomatoes - two cans of 400 gr.
- One big onion.
- Fresh basil.
- Baked cheese - 400 gr. Pre-frozen.
- Salt, sugar, black and red pepper to taste.
- Olive oil - three tablespoons.
The cooking process is as easy as possible, because there is no need to peel and cut fresh tomatoes.
In olive oil, fry onions for about five minutes.
Then add the already sliced tomatoes from the cans and fry for another five minutes.
All this is shifted to a large pot.
We fill in a pan with two glasses of water.
Add tomato paste from two bottles to the same place and boil it all on medium heat for about 20 minutes.
Salt, pepper and add sugar to taste.
Grate frozen cream cheese on a grater and send it to the pan. Stir well.
Throw basil in the pan, leaving a couple of leaves for decoration.
Cook for two minutes and remove from heat.
Grind the entire contents of the pan using an immersion blender.
Done! You can serve.
