Cooking with Taica #2 Pork loin steaks with mash and salad (very easy)

Here’s my recipe how to prepare a simple and delicious dish. Cooking at home can save you money and you have a freedom to cook in a way you like.

Ingredients for 4 persons:
4-6 medium sized white potatoes for cooking
4-6 slices of pork loin approx 1,5 cm thick
Salt
Pepper
Chilli powder
Butter
Milk
White wine
Olive oil
Medium sized onion (or por or spring onion)
1 garlic clove

MASH
Peel the potatoes put them into the water, boil it and keep cooking until the potato is cooked. Remove the water, use the potato grinder to smash the potato into a pan or pot. Add butter, hot milk and salt just enough to have the desired mash texture, mix all well with a hand mixer (see the pic). Cover it until served.

Tools:

Note: for a good mash, you should be quite generous with the butter and the potato must be peeled before cooking. Also mash can't wait long, it must be prepared and served just after potato is cooked.

PORK LOIN STEAKS
Season the slices of pork loin with your preferred seasoning, i put olive oil, black pepper, chilli powder and salt. Cut little the edges of the stakes so that the meat will not shrink together. Put the pan (iron cast pan or stainless steel avoid cheap non stick) on the stove, high fire and wait until it is really hot. Put slices of meat directly into the pan, no additional oil needed. Wach your meet and don't touch it. When the upper side of the meat becomes to sweat, after 2 - 3 minutes or so (depends of the heat and how thick is your meat) turn the stakes, you must have a nice brown colour on the other side. Continue frying for about 2 minutes or so on the other side and then remove meat from the pan. Put it rest into another warm but not hot pan.

DEGLAZE
The pan that was used to fry the stakes is full of flavour. You don't want to wash that away. What you need to do is to add some olive oil just a spoon or so and some butter and melt it, then pour half glass of a white wine and let it evaporate on a quite strong fire. Add chopped onion and one clove of garlic (not chopped not peeled just smashed) mix and fry for a while to smell the garlic and to make the onion nice brown, then remove the garlic clove and pour some hot water or soup stock if you have, let it cook (medium-small fire) without covering, so that the liquid reduces and the onion becomes soft. When you are satisfied with the texture of your sauce add the pork slices of loin back into it and cook for another half to one minute or so, not too much you don't want to overcook the meat. Remove from fire.

SERVE pork loin steaks with mash potato (or rice or tagliatelle) fresh salad from the garden (italian dressing).

Time needed all together about 30 - 45 min including salad.
