Bean Soup
Recipe Servings: 5
Ingredients
two onions, chopped
two cloves garlic, minced
one teaspoon grated fresh ginger
six cups water
one cup red lentils
one (15 ounce) can garbanzo beans, drained
one (19 ounce) can cannellini beans
one (14.5 ounce) can diced tomatoes
half cup diced carrots
half cup chopped celery
one teaspoon garam masala
one and half teaspoons ground cardamom
half teaspoon ground cayenne pepper
half teaspoon ground cumin
one tablespoon olive oil
Instructions:
In large pot saute; the onions, garlic, and ginger in a little olive oil for about five minutes.
Add the water, lentils, chick peas, white kidney beans, diced tomatoes, carrots, celery, garam masala, cardamom, cayenne pepper and cumin. Bring to a boil for a few minutes then simmer for one to one and half hours or longer, till the lentils are soft.
Add half the soup in a food processor or blender. Return the pureed soup to the pot, mix and enjoy!
