Veggie Potato Stew
Recipe Servings: 10
Ingredients
three quarts water
eight large potatoes
four large carrots
two stalks celer
two small onions
one third cup butter
two tablespoons all-purpose flour
one and half teaspoons salt
one teaspoon ground black pepper
quarter teaspoon paprika
two cups heavy cream
Instructions:
In a large pan over medium flame, heat the water and mix in the potatoes, carrots and celery. Cook fifteen minutes, or till tender but firm. Remove from flame. Drain and set aside, reserving liquid.
Put the onions and butter in the large pan. Over medium fire, slowly cook and mix ten minutes, or till the onions are tender. Add in the flour, salt, pepper, paprika and heavy cream. Combine in the potato mixture. Continue cooking and mixing, adding the reserved liquid a tablespoon at a time, tlil the mixture has reached a desired consistency.
