Healthy Cauliflower Soup
Recipe Servings: 4
Ingredients
two tablespoons butter
one large onion
four cloves garlic
two large potatoes
two carrots, chopped
two (14.5 ounce) cans chicken broth
one head cauliflower
one cup milk
one teaspoon salt
half teaspoon ground black pepper
one eight teaspoon ground nutmeg
one tablespoon dry sherry
one tablespoon chopped fresh parsley
Instructions:
In a large pot over medium flame, dissolved butter. Mix in onion and garlic and cook till onion is translucent, about five minutes. Mix in potatoes and carrots and cook five minutes more. Add in chicken broth and bring to a boil. Mix in cauliflower, cover, reduce flame and simmer till vegetables are tender, ten to twenty minutes. Remove from flame.
