Filipino's National Dish Adobo Recipe !!

Hi Steemians !! Today I'm going to post our traditional Filipino dish which is Adobo.
Even though its a Filipino dish we had different versions of cooking it,it depends on the locality or provinces, we also have different names on this dish.

Adobo is considered as Filipino's National dish because every Filipino home claims to have the best Adobo recipe. Here you can see the different types of Adobo recipe that differs because of the locality.

  • Adobong Manok sa Pula ( Marinated Chicken in achiote )
    This recipe originated in Luzon , around Batangas City
    The difference beetwen this recipe on the ordinary Adobo it has grounded chicken liver and achiote to make it more tastier !

This recipe is originated in Visayas, Iloilo City
This recipe is somewhat unique because it is originated from Adobong Kangkong ( Water Spinach ) and it is mixed together to make it different !

  • Randang ( Spicy Adobo )

Well this version is only for those who have stable stomach because of its spiciness , and the recipe originated from Mindanao , Maranao Angeles City.This recipe is totally different from your typical Adobo because it is made by Maranao people ( They're Muslims ) They're not using chicken pork instead they're using cow pork.

Now I'm going to show you the traditional Chicken Pork Adobo Recipe.The key to make a very simple yet delicious adobo is all about preparation.

This is basic Filipino Chicken Adobo Recipe. It makes use of simple adobo ingredients such as soy sauce, vinegar, dried bay leaves and whole peppercorn.

Recipe type: Main Dish
Cuisine: Filipino
Serves: 4

Ingredients
2 lbs. chicken, cut into serving pieces
3 pieces dried bay leaves
4 tbsp soy sauce
2 tbsp vinegar
3 cloves garlic, crushed
1 to 2 cups water
¼ cup cooking oil
½ tablespoon white sugar
Salt and whole peppercorn

Instructions

In a large container, combine the soy sauce and garlic then marinade the chicken for at least 1 to 3 hours
Place the cooking oil in a pan and apply heat
When the oil is hot enough, put-in the marinated chicken. Cook all the sides for about 5 minutes.
Pour-in the remaining marinade and add water. Bring to a boil
Add the dried bay leaves and whole peppercorn. Simmer for 30 minutes or until the chicken is tender
Add vinegar. Stir and cook for 10 minutes.
Put-in the sugar, and salt. Stir and turn the heat off.
Serve hot. Share and Enjoy!

We Filipino's always want to make our dishes unique and differs from traditional recipe even in other dishes.
There's a saying in our culture "It's not about the recipe its all about the person who makes it and how he pours love on what he is doing to make it special".
