Sauteed Mung Beans with Moringa Leaves for the lunch
Mung beans plus moringa leaves is a superb food especially for children and pregnant women. It's a cheap source of protein and other essential nutrients.
This filipino recipe is very easy to cook. I just added a pinch of turmeric for an appetizing color.
This is my own version of Mung beans with moringa leaves:
Ingredients:
Mung beans
Moringa leaves
Onion 1pc.
Garlic 4pcs.
Anchovy sauce 2tbsp
Salt & pepper
Methods:
Boil Mung beans until soft. Set aside
Chopped and prepare onion, garlic, moringa leaves.
Heat wok, add oil, add garlic, saute.
Add chopped onions, add ginger, add turmeric powder. Sautee for a minute.
Add boiled mung beans, with a little bit liquid from boiled mung beans.
Season with salt, and pepper.
Add anchovy sauce. (Optional )
Simmer for 15 minutes.
Switch off fire and Add moringa leaves.
Leave it uncover So that moringa leaves won't be overcook.
Serve with warm rice. Best to eat during lunch.
Nice recipe, especially with the turmeric in there. I love to use turmeric, but more for the taste than the color. 😉
