Delicious Shrimp and Quinoa Curry Stir Fry
For dinner tonight I was craving stir fried veggies but I was also craving curry. So in a true kitchen experiment, I decided to combine both. I wanted to make a one pot meal that satisfied my family. I looked in my fridge and pulled out some vegetables, shrimp, and quinoa and went to town! The dish turned out bright, light (room for seconds), and DELICIOUS!
INGREDIENTS:
- 1-2 lb Shrimp
- 1 cup quinoa (uncooked)
- 2 Tbs coconut oil
- 1/2 white or red onion
- 2 cloves of garlic
- 2 red bell peppers
- 1 green pepper
- 2 zucchini
- 2 roma tomato
- fresh parsley
- 3 leaves fresh basil
- 1/2 jar of curry sauce
- fresh lemon juice
- 2 tsp paprika and 2 tsp garlic powder
- Salt and pepper to taste
METHOD:
** Cook quinoa in separate pot. Set aside. Chop veggies and fresh herbs.**
** On medium high heat, cook onions, garlic until tender. About 5 minutes. Add red and green bell peppers.Turn to medium heat and let simmer for about 5 minutes. **
** Add zucchini, chopped fresh basil, and 3/4 parsley and cover to simmer until zucchini is tender.**
** Add Shrimp and spices to dish. Stir fry all the ingredients for about 2 minutes to let shrimp cook a little but not all the way (to prevent over cooking shrimp). **
** Now Add tomatoes and 1/2 jar of curry sauce (I usual make my own curry sauce but tonight I took a short cut!) **
** Finally after stirring and cooking dish for another minute or so, add the quinoa. **
** Cook dish on low heat for an additional minute. Take off heat. Sprinkle some fresh lemon juice to finish off the dish. Serve on a warm plate and enjoy! **
