in #recipe7 years ago

I'm a big fan of chocolate and being raw vegan has not stopped me with my chocolate indulgence. In fact, I eat chocolate everyday with zero side affects or feelings of guiltiness. If you look breakdown the nutritional value and health benefits of the chocolate that I eat, you'll see that it's really healthy and its no wonder why I eat it daily! You would too!

The chocolate I make of course is FREE from dairy, sugar and processed, refined ingredients.

Did you know there is a difference between cacao vs cocoa?!

Cacao vs Cocoa Difference
While both cacao and cocoa come from the same source, they are different.

Cacao is the raw pure superfood whereas cocoa is the unprocessed form of cacao with ts many beneficial properties stripped away.

Cacao is rich in antioxidants, essential minerals and vitamins, and amino acids, and helps enhance mood, supports a healthy weight loss, increases energy and stamina, supports healthy brain function, and much more. Raw cacao is often found in healthy vegan and raw food recipes.

Cocoa on the other hand is contains low levels of cacao and is often used in products with sugar, milk, and refined oils. Not a superfood after all! All conventional chocolates and candies on the shelves sold in stores contain cocoa.

Best to read ingredients and avoid cocoa.

Here is a simple, healthy, sweet, clean, and yummy chocolate recipe that you can make from scratch and feel GOOD about!

Raw Vegan Chocolate Recipe

The recipe below is for a small batch. Double or triple the ingredients to make a bigger batch.

  • 5 tablespoons raw organic cacao powder
  • 2 tablespoons raw organic sweetener of choice (great options are cconut nectar, maple syrup or black strap molasses)
  • 4 tablespoons melted unrefined coconut oil
  • 3 SweetLeaf stevia packets (for additional sweetness, optional)

Directions:
1.) Melt the coconut oil in a small saucepan.
2.) Scoop cacao powder in a bowl.
3.) Pour melted coconut oil over cacao powder and mix.
4.) Add in the sweetner of your choice.
5.) Mix and stir well until a creamy, smooth and thin-thick consistency.
6.) Pour chocolate sauce into molds and freeze until frozen. Generally intl needs 5 to 8 minutes to freeze, depending on how quick your freezer freezes things.

Serve and enjoy!

If you want a unique and yummy treat, add a tsp of organic peanut butter between the chocolate to make a healthy, raw version of Reese's Peanut Butter Cups!

Tips:

  • If the consistency is too thick, simply add more melted coconut oil.
  • If it doesn't take sweet enough, add stevia or more sweetener of your preference.
