Lemonalade Curd - Recipe from the Pirate Kitchen

Here is a very simple recipe to make something akin to Marmalade but also a bit like Lemon Curd.

Ingredients

Lemon Pectin
Stewed Apple
Sugar
Lemon Rind
Lemon Juice
Salt

We have provided no measurements for the ingredients as it is up to you how much quantity you want to make. Bear in mind that you will need roughly equal parts Lemon Pectin, stewed Apple and Sugar. Salt, Lemon Rind and Juice can be added to taste. Also if you want a less bitter preserve soak the rind overnight in cold water and if you don't like bitter tastes at all don't make this recipe.

We ended up with 2 and 2/3 of a jar after stewing and straining 10 Lemons, adding a few heaped spoons of stewed apple and a good bunch of the other ingredients. Sometimes it's fun just to wing it and the hallmark of a good cook is years of experimentation. Remember that it is very easy to add ingredients and very hard to remove them. Add a little at a time and taste as you go.

Method

Step 1.

Boil down the skins and pith of Lemons to make a cloudy liquid. Pectin. Strain this into a large saucepan.

Step 2.

Add the rest of your ingredients. Bring to the boil, stirring often, and reduce until a thick jelly skin starts to form on the surface even as the mixture is very hot.

Step 3.

Pour into sterilised jars and seal the lids.

You can enjoy this preserve right away on toast, crackers or anywhere else you might enjoy marmalade or Lemon curd. Or you can store it in a cool dark place for many years.
