Candied Lemon Peel - Recipe from the Pirate Kitchen

A simple recipe for creating some colourful and tasty sweet treats.

Ingredients

Lemon (or any citrus fruit) rind.
1 tablespoon Sugar.

Method

Step 1.

Start by cutting your berries (yes, Lemons are berries) into slices so you have circles. Then cut the inner juicy bits away from the outer pith and rind.

Step 2.

Soak the rid overnight in water to remove some of the bitter flavours.

Step 3.

Drain the rind and place in a pan with a little water and a tablespoon of sugar

Step 4.

Heat the pan on a low to mid heat until the majority of the water has evaporated and the rind has started to turn translucent. You don't want to cook too hot or the sugar will start to burn. Once you have a thick sugar syrup that bubbles a lot you are good to go.

Step 5.

Lay the rind out on a tray lined with baking paper. Place in a low heat oven to dry out. This may take several hours. Leave the oven door open to aid in the process.

And voila, that is it.
Now enjoy.

These will probably last for a good while (one week +) if kept in an airtight container. Beware that moisture in the air will quickly make them sticky again. Of course in our house, they don't get that long to hang around.

Oh yum. I've only ever tried this with orange peel. Sometimes I cover them in chocolate too.
