I do not understand why a discussion opens up about whether a child should have a 100% vegetable diet, but nobody criticizes the amount of refined sugars, processed foods and Mc Donalds junk food consumed by children today. We must find a way to give them a healthier diet, for this there are many vegan recipes that can be prepared for children whose difference you will not notice with those of animal origin: hamburgers of legumes or soybeans, cereal balls or vegetables, healthy banana cookies and oatmeal, vegetable creams, smoothies, among others.

Another of the mistakes that parents make is to say: she or he does not like that, I answer them but it is that she has tried it some time, the mother does not answer me, I know what my son likes, big mistake because you are already sending the message that the vegetables are not pleasant, when giving a vegan meal you should support it naturally, and that he or she also see you eating with pleasure the food you offer, they only hear the slightest negative comment from the food, immediately set aside the plate, and already recorded in his mind that this menu is not pleasant and reach adults thinking they do not like.

Vegan recipe for our children:

This recipe is a perfect choice for kids who love nuggets without having to resort to meat.

Pumpkin and mushroom nuggets.

Ingredients:

  • 400 grams of Pumpkin clean
  • 2 tablespoon chopped onion
  • 2 pinch of Parsley
  • 2 pinch of salt
  • 2 tablespoon of olive oil
  • 50 grams of Mushrooms
  • 2 tablespoon of chickpea flour
  • 1 glass of Breadcrumbs or more, to taste.

Instructions

  • Cut the pumpkin into cubes, place it in a refractory dish and cover it with aluminum foil.
  • Cook in the oven, preheated to 200 º C, for 30 minutes.
  • Soften the mushrooms in water, drain them (reserve the water) and chop them fine.
  • Chop the onion and fry it in oil.
  • Add the mushrooms and 4 tablespoons of the water of your soaking and cook 10 minutes.
  • Crush the pumpkin with a fork, mix it with the chickpea flour, the mushrooms and the onion, the bread crumbs, the
  • chopped parsley and salt to taste.
  • Knead and when it has the texture so as not to stick in the hands form the nuggets.
  • Coat in bread crumbs and fry with little oil.
