Captian Jack's Pulled Burritos. Full of bbq and spiced rum flavour!
This is one for everyone's recipe folder! Quite an easy dish to make and everyone loves a good burrito. These are 100% Vegan, yet have a meaty texture thanks to the baked Jackfruit. There is a great warmth and a full flavour too. Plus you get to eat with your hands, who doesn't love a good handful of delicious burrito?You can make the Baked jack part anytime and freeze for midweek burritos too, should that capture your fancy!
Ingredients:
- 2 cans of young green jackfruit in brine (don't get Jack in syrup, it will be too sweet)
- 2 shots or 60ml of Captain Morgans spiced rum
- 5 Tbsp Soft light brown sugar or coconut sugar if you have it
- 3 Tbsp light soy sauce
- 6 Tbsp tomato Ketchup
- 1 Tsp Fresh ground black pepper
- 1/2 Tsp Nutmeg
- 1 Tsp Paprika
- 1 Tsp Garlic granules
- 4 Tbs Fresh lime juice (about 60ml)
- 5 large floury wraps
- 300 - 400 g of your favourite mexican spiced mixed beans (you can typically buy these precooked in cans, if not just make your own)
- 1 cup of white rice (uncooked weight), cooked to your prefrence
- 4 Tbs fresh coriander
Method:
Pre heat oven to 180 Deg C
Add sugar, soy sauce, rum and ketchup to a medium pot. Heat until sugar is melted through the other liquids, approx 3 min on med heat.
Stir in the remaining dry spices and mix well keeping on heat. stir through for 2 min more. Once fully combined and heated through remove from heat and set aside
Drain, de-core and de-seed the Jackfruit, Leave some large chunks and break some up into strands.
Press as much of the excess water out of the jackfruit, I use t large mixing bowls of the same size. Simply place the jackfruit in one of the bowls and place the other bowl on top of this.
Once you have presses as much water out as possible, add the jackfruit to the pot with the sauce made earlier.
Coat the jackfruit thoroughly and then transfer to an oven proof dish cover tightly with foil and place in hot oven for 20 min, after the 20 min remove the foil cover and bake for another 20 - 25 min. This will toughen up the jackfruit and cook off any remaining liquid. It should have darkened in colour and you might just have some crispy bits on top!
Now comes the fun part
Set up your workspace in a station type layout. Station 1 Tortilla, Station 2 Rice, Station 3 beans, Station 4 Jack, Station 5 your sauce I.E. Salsa, guac etc(if you want)
Take a warm tortilla, place rice then beans then Jack then your sauce, use the tortilla to mix all the contents so you get an even mix every bite!

They are just fantastic. Everyone here loved them anyway. Jackfruit is super versatile too, it can be soft like a flaky fish like in my chowder recipe or tougher like a pulled pork type dish here.
There are two of us, in my country it is not very common, but that really looks amazing 😍
Oh the Jackfruit isn't common? I'm in Ireland and its not common here at all! But asian markets seem to be every where and they typically stock this.Where are you based?
Colombia! Very tropical country and yet I have never seen that fruit here 😕
I think they mainly grow in asia, but I would be sure they would grow in Columbia too. I wouldn't know if you could plant them there though. But could be worth doing some research.

Ok that looks delicious. I love baking my jackfruit too it comes out with the nice crispy texture! Except I’m lazy and use store bought bulgogi marinades but should probably start making my own haha.
I have used plenty of store bought ones too, I just find that a lot of them have long ingredients lists and I try to keep it as simple as possible. Thanks for checking it out.
