Gluten Free/ Keto Friendly: Poppyseed Muffins

Another Recipe Coming at Ya!

Ughh! These are perfect to eat mid-morning, a night time snack, or anytime, really. They're bursting with lemon flavor, and carb friendly.


Macros include:

(Serving: 1 of 12 muffins)
Calories- 141
Total Fat- 13g
Saturated Fat- 6g
Cholesterol- 50mg
Sodium- 22mg
Total Carbohydrates- 2g
Dietary Fiber- 1g
Sugars- 0g
Protein- 4g


Ingredients

  • 1 cup almond flour
  • 1/3 cup Truvia baking blend or other sweetener
  • 1 teaspoon baking powder
  • 1/4 cup full fat ricotta cheese
  • 1/4 cup coconut oil
  • 3 eggs
  • 2 tablespoons poppy seeds
  • 4 True lemon packets
  • 1/4 cup heavy whipping cream
  • 1 teaspoon lemon extract

Instructions:

  • Pre-heat oven to 350°
  • Measure out and mix all ingredients together until smooth.
  • Line a muffin pan with liners or use non-stick spray
  • Pour equal amounts in tins to make 12 servings
  • Bake for 40 minutes or until a knife pulls out cleanly from the center of muffin
  • Cool before eating 🤗

Ooooo! Keto! Miranda, will you mail me some? I don't have an oven here- it's like impossibly expensive to get one (no one has them here... just stove top burners) makes my baking experience super interesting to say the least haha
