Gluten Free/ Keto Friendly: Poppyseed Muffins

Ughh! These are perfect to eat mid-morning, a night time snack, or anytime, really. They're bursting with lemon flavor, and carb friendly.
Macros include:
(Serving: 1 of 12 muffins)
Calories- 141
Total Fat- 13g
Saturated Fat- 6g
Cholesterol- 50mg
Sodium- 22mg
Total Carbohydrates- 2g
Dietary Fiber- 1g
Sugars- 0g
Protein- 4g
Ingredients
- 1 cup almond flour
- 1/3 cup Truvia baking blend or other sweetener
- 1 teaspoon baking powder
- 1/4 cup full fat ricotta cheese
- 1/4 cup coconut oil
- 3 eggs
- 2 tablespoons poppy seeds
- 4 True lemon packets
- 1/4 cup heavy whipping cream
- 1 teaspoon lemon extract
Instructions:
- Pre-heat oven to 350°
- Measure out and mix all ingredients together until smooth.
- Line a muffin pan with liners or use non-stick spray
- Pour equal amounts in tins to make 12 servings
- Bake for 40 minutes or until a knife pulls out cleanly from the center of muffin
- Cool before eating 🤗

Ooooo! Keto! Miranda, will you mail me some? I don't have an oven here- it's like impossibly expensive to get one (no one has them here... just stove top burners) makes my baking experience super interesting to say the least haha
