If you have no problem with Gluten you should definitely try out Seitan.
I think I did something similar to you, but it was more specific; involved supplements. The big deal was the no fat part, because the aforementioned nuts, avocado (and chickpeas) contain a lot of fat.
So spinach, every kind of mushrooms and Seitan + any kind of salad/vegetables (no potatoes of course).
Thanks, my friend here does have to avoid gluten, so seitan is out, but we are finding tofu and tempeh are working pretty well in general. :)
We are not so much looking to avoid fat, but to just keep it fairly low-ish.
