How to Prepare Traditional Greek Flour - Feta cheese pie "Alevropita"

"Alevropita" is a famous and very delicious Greek pie from Ioannina city. It is fairly easy to prepare. Today I will share with you the secret recipe of this famous pie.

Ingredients:

350-400 grams of flour (for pan 40x40)
3 Eggs (2 + 1 hit for the end)
1 glass of milk (220 ml.)
90 ml. olive oil
50 grams butter
300 grams feta cheese

How to prepare:

  • Turn on the oven to 250 ºC

  • Spread the 20 grams of butter to the pan then add 40ml. olive oil and place in oven to burn well.

  • In a large bowl, stir the flour first and the 2 eggs and milk; Stir well to become mush and add 200 grams of feta cheese and about 30 ml. oil. The mixture should be a fairly liquid.

  • Pour the migma into the Pan that burns and the spread everywhere.

  • Add the rest of bits of feta cheese spreading equally on the surface and the remaining oil to sit from above the migma; Put on top also some bits of butter. Finally, stir the egg left and pour over too to the surface of the pie.

  • Place the Pan with the migma and on the Middle shelf, lowering the temperature to 200 ºC . In 40-45 ' your “alevropita” should be ready.The final thickness should be ideally approximately 1 cm.

  • When the alevropita is ready cut it into portions and serve.

Served as a breakfast, snack or normal eating, ideally accompanied by good raki or ouzo.
