Confectioners (Powdered) Sugar
The finest white sugar that you can get. It is about 3% cornstarch to help keep it from clumping. Usually, it's used for making icing or glazing baked goods. Also known as Gula Halus in Indonesia.

The white table sugar that everyone is accustomed to. It's the most commonly used in recipes.

White sugar that has a much larger crystal size. It's often used for decorating. Some are colored. Also known as Sparkling Sugar. Much found in Scandinavia.

This is raw cane sugar with the surface molasses removed. It has a coarse texture and a blonde color. Commonly used for sweeteners in some beverages because it's caramel taste.

Honey and Maple Syrup
You can replace granulated sugar with honey or maple syrup in most recipes. Use 3/4 cup honey or maple syrup for every 1 cup granulated sugar. When baking with honey or maple syrup, reduce the liquid in the recipe by 3 tbsp for every cup used and reduce the oven temperature by 25 degrees F to avoid burning. Honey and maple syrup can be used interchangeably.
