3 Tbsp. unsalted butter, divided
1 cup chopped onion
12 oz. zucchini, cut into ¼-inch thick rounds
1 cup fresh corn, cut from about 1 ear of corn
1 tsp. dried oregano
1½ - 1¾ lbs. boneless, skinless, chicken thighs
