It is Monday and time for a fresh start to a new week. This pasta dish is perfect for a quick lunch or dinner: Very healthy and on the table within 15 minutes. Here's the deal:

Ingredients for 2

500 g pasta of your choice (e. g. Penne)
1 mature avocado
2 cloves of garlic
1/2 bunch basil
1 tablespoon freshly squeezed lemon juice
1 teaspoon water
2 tablespoons olive oil, minced parmesan
salt, pepper, some chili flakes

Preparation

  1. Cook pasta al dente so that they are still pleasantly firm to the bite. Season the water with a pinch of salt.
  2. Crush the basil with the garlic in a mixer. Then add lemon juice, water, olive oil and the flesh of the avocado. The lemon juice ads a nice freshness and prevents the avocado from turning brown too fast.
  3. Finally puree everything together until the pesto is creamy.
  4. Drain the pasta and mix in the pesto. When serving, season to taste with salt, pepper or chili flakes.
