ENERGY PACKED SNACK BALLS FOR ANY TIME OF THE DAY
CRANBERRY LIME AND COCONUT BALLS
Prep time: 20 minutes
Energy packed snack balls for any time of the day – a little pick me up or just a sneaky sweet hit!
1 cup of desiccated coconut – plus some
2/3 cup of dried cranberries
1 cup of almond meal
2 tablespoons of coconut oil
1 tablespoon of maple syrup
1 ½ teaspoons of lime rind
1 tablespoon of lime juice
In a food processor, blitz cranberries till they are chopped finely.
Add the remaining ingredients and pulse combine them.
Roll into balls of desired portion.
Coat with extra coconut.
Place on a tray in the fridge to set.
Ready for snacking....
