Lentil meatballs

Hello friends I hope you are well, today I share this recipe super easy to prepare, we know that lentils apart from all the nutrients they provide, is an ideal substitute for meats and of course much healthier.

They are rich in essential minerals for our body such as magnesium, potassium, phosphorus, iron, selenium and calcium, they provide us important vitamins such as A, B1, B6 and C, which have an antioxidant effect and participate in many of the reactions that They are carried out in our body.

They are easy to digest, so they are especially recommended for people who have difficult digestions, are an excellent source of vegetable protein, it is recommended to provide all the essential amino acids combine them in the same meal with a cereal

These legumes have an almost null content of fats, being a very beneficial food for those people who are taking a diet to lose weight and who want to monitor the weight, they are source of carbohydrates that provide us with energy to carry out our daily activities

The most important thing is that it is recommended to include lentils in our diet between one and three times a week, and there are several options to prepare them and enjoy it in various ways without getting bored of them

Ingredients:

  • 400g of crushed tomatoes.
  • 200g of brown lentils
  • 150g of breadcrumbs or some flour that helps us to give consistency.
  • 1 carrot
  • 2 cloves of garlic
  • 1 red onion.
  • 2 egg
  • ½ teaspoon dried oregano.
  • ½ bunch of fresh parsley.

Preparation:

Wash the lentils and put in a pot with water to cover, bring to medium heat and when it breaks to boil, reduce heat and cook for 25 minutes or until soft, during cooking check the water and add more if necessary , meanwhile we preheat the oven to 225 ºC, peel a clove of garlic and onion and chop finely, peel the carrots and grate them.
Sauté the onion and garlic in a pan with a little oil or butter, add the grated carrots and continue cooking for three more minutes. Once the lentils are ready, we crush them in a processor together with the garlic, the onion, the carrots, the aromatic herbs, the breadcrumbs and the eggs. If necessary, add more bread crumbs until an easy-to-mold paste is obtained. add the chopped fresh parsley.
We formed the meatballs, all of equal size, and we passed them through breadcrumbs, greased a baking dish with oil and placed the meatballs. Bake for 30 minutes or until golden brown.
Meanwhile we peel the remaining garlic clove and chop it. Sauté in a pan with a little oil for three minutes, add the crushed tomato, bring to a boil, reduce the heat and let simmer over low heat for ten minutes. We pepper to taste and once the meatballs ready we serve bathed in this rich tomato sauce.

These meatballs can make them fried or as they are in the recipe to the oven that are much healthier.
