This bread is perfect for breakfast because it is our most important meal of the day, it helps us to face the day come, it gives us the energy to face our routine, if we choose wisely the healthiest foods, our day will end even better than what has started.
- 3 ripe bananas
- 2 tablespoons of butter
- 1 tablespoon of cinnamon powder
- 1 and ½ cup of wheat flour
- ½ cup oat flakes
- 2 eggs
- ½ teaspoon of baking powder dessert
- 1 teaspoon vanilla essence coffee
Preheat the oven to 170º, while we prepare the bread, peel and chop the bananas, and sauté them in a pan with the butter and cinnamon powder, for about 3 minutes, remove them from the pan and place them on a plate to crush them with a fork until obtaining a puree. In a bowl, mix the eggs with sugar, flour and oat flakes, add the banana puree and mix well. Pour the mixture into a rectangular mold (type plumcake) of silicone or previously greased and bake the dough for about 35 minutes, remove the cake from the oven and wait about 5 minutes before unmolding. Let it cool completely on a rack and, when ready to eat, cut and serve.
It is important that the bananas are ripe so that they have that special sweetness and the perfect texture. If not, it will be harder to crush them.
You can add nuts or grated coconut to the recipe for an extra flavor.
