Nyala's Ethiopian Recipes #216

Spicy Pea Puree

INGREDIENTS:

one third cup onion
two garlic cloves
one tablespoon corn oil
one cup dried split green peas, soaked cooked and drained
half teaspoon turmeric
half teaspoon salt
three teaspoons hot green peppers
one cup water

INSTRUCTIONS:

Mash the peas. Keep aside.

In dry pan over moderate low fire, mix fry the onion and garlic for two minutes.

Put oil and mix fry one minute more.

Put the mashed peas, tumeric, salt, and chili. Combine well.

Place the water and cook three to four mins longer to reduce the mixture to a thick, green, well spiced puree.
