One of the quickest, easiest and tastiest pasta recipes, this coriander pesto will surprise and inspire you to keep cooking. This recipe is a twist on an old time favorite basil pesto. The coriander takes this dish to new heights and leaves you feeling happy and totally satisfied. You can be eating within 20 minutes!



What you will need:

  • 5 cups coriander leaves
  • 1 cup cashew nuts, sunflower seeds
  • 1/3 cup grated Parmesan cheese
  • Salt & Pepper
  • Spiral pasta
  • Fresh Limes
  • 2 Onions
  • 4 Cloves Garlic
  • Sesame Seed Oil
  • Sesame seeds
  • Extra Virgin Coconut Oil
  • Olive Oil
  • Chili Powder

 

Making the Pesto

  • Remove the stems from the coriander so there are mainly leaves
  • Grind the coriander leaves, nuts and garlic into a paste.
  • Mix well and add around 1/2 cup olive oil or enough to make the pesto look saturated.
  • Add Parmesan and season to taste with salt & pepper
  • Finally mix in 2 teaspoons of sesame oil




Making the Pasta

  • Boil some water and cook the pasta. Drain when ready.
  • Fry the onions on medium to high heat in coconut oil until transparent with golden brown edges.


  • Add salt and pepper to taste.
  • Add garlic and continue to fry for 2 minutes
  • Turn the heat off and wait 5 minutes to cool
  • Add the pesto sauce and mix well
  • Plate up with some garnish and sprinkle some sesame seeds on the top

So simple, this dish can be ready in 15 minutes and tastes just out of this world. I hope you try it!

This recipe looks great, simple and easy to cook and you can even replace the "parmesan cheese' with 'vegan parmesan cheese' and then you have a Vegan meal, which is great news for Vegans!

With coconut oil and all the nuts and seeds it's really nutritious too!

yes! i actually posted a vegan pesto not so long ago. it is amazing too! very similar but no cheese at all.. instead its just lemon, nuts and basil.. and is SO good! with coconut oil not olive on that one..
