Butterscotch
INGREDIENTS
one cup packed brown sugar
quarter cup cornstarch
three cups milk
half teaspoon salt
three egg yolks
quarter cup butter
one teaspoon vanilla extract
DIRECTIONS
In a small sized bowl, stir together brown sugar, cornstarch and salt. Put enough milk to make thick paste. In a pan over medium heat, bring milk to a broil. Mix in brown sugar mixture, return to a boil, and cook for one minute.
Put egg yolks in small sized bowl. Temper the yolks by quickly stirring in about quarter of hot milk mixture. Fill yolk mixture back into hot milk mixture, and return to heat. Cook, mixing constantly, for one minute; eliminate from heat. Mix in butter and vanilla till butter is melted. Fill into bowls, and let cool slightly.
