Enchiladas

Hi everyone, I brought to you another delicious recipe of Enchiladas. Please let me know in the comments what do you think, and if you have any suggestions, you can give.

Ingredients

  • Boneless, skinless chicken breast meat – 2 pounds, cut into pieces
  • condensed cream of chicken soup – 1 Can of 10.75 ounce
  • Green onions – 1 bunch, chopped
  • Mild taco seasoning mix – 1 package of 1.25 ounce
  • Chopped green chilies – 1 Can of 4 ounce
  • Cheddar cheese, shredded – 3 cups
  • Enchilada sauce – 1 Can of 10 ounce
  • Small onion – 1 , chopped
  • Butter – 1 tablespoon
  • Chilli powder – ¼ teaspoon
  • Sour cream – 1 ¼ cups
  • Lime juice – 1 teaspoon
  • Water – 1 cup
  • Onion powder – ½ teaspoon
  • Garlic powder – ½ spoon
  • Tortillas - 4


Directions

  1. Boil chicken pieces in a large pot over high heat, and then reduced the heat, simmer and then shred the chicken.
  2. Mix sour cream with chicken soup in a saucepan, and sprinkle chilli powder and stir it over low heat and bring to simmer.
  3. Heat the butter in another pan and fry the onion in it until it is very light brown and softened. Add the shredded chicken to it, cook for 1 minute and then mix chopped green chillies, taco seasoning, half the bunch of green onions, and water. Simmer for few minutes and then add lime juice, onion powder and garlic powder, and simmer again for another 10 minutes.
  4. Mix 1 cup of soup mixture with chicken mixture in a skillet, and spread the remaining chicken soup in a baking dish.
  5. Fill the tortilla with chicken mixture, sprinkle the cheese over it and fold the tortillas. 
  6. Pour enchilada sauce over the tortillas, and then sprinkle some cheese, remaining chopped green onions, and some olives on it.
  7. In a preheated oven, bake this enchiladas for upto 25 minutes until cheese is melted.

Enchiladas is one of delicious dishes, originated in Mexico, but now is famous world wide. I make it at home with both beef and chicken, and I also make my own tortillas at home/. Moreover, I use two different cheese sometimes which taste even more good.
