Comfort in a Bowl – Chicken Khichuri Recipe
Today I Cooked: Warm and Homely Chicken Khichuri
After the rich and spicy biryani, I decided to cook something lighter and comforting – Chicken Khichuri. This one-pot dish is perfect for a cozy meal, combining soft rice, lentils, and tender chicken with mild spices.
Ingredients:
1) 1 cup rice
2) 1/2 cup moong dal (yellow lentils)
3) 300g chicken, cut into pieces
4) 1 onion, chopped
5) 1 tomato, chopped
7) 1 tsp ginger-garlic paste
8) 1/2 tsp turmeric powder
9) 1/2 tsp red chili powder
10) 1 bay leaf
11) 2-3 green chilies (optional)
12) Salt to taste
13) 2 tbsp ghee or oil
14) Water as needed
15) Fresh coriander leaves for garnish
Instructions:
1. Wash rice and lentils thoroughly and soak for 15 minutes.
2. Heat ghee in a pot and sauté onions until soft. Add ginger-garlic paste and cook for a minute.
3. Add chicken pieces, turmeric, chili powder, and salt. Cook until the chicken changes color.
4. Add chopped tomato and green chilies, cook for 5 minutes.
5. Drain rice and lentils, then add them to the pot. Pour enough water to cover all ingredients generously. Add bay leaf.
6. Cover and cook on medium-low heat until rice, lentils, and chicken are tender and well-blended (about 20-25 minutes).
7. Garnish with fresh coriander and serve hot.
