Pancakes with chicken and gherkins
Ingredients:
For pancakes:
- Milk 500 ml.
- Eggs 3 pcs.
- Wheat flour 1.5 tbsp.
- Sugar 0.5 tbsp. l.
- Salt 0.5 tsp.
- Vegetable oil 2 tbsp. l.
For filling:
- Chicken breast (2 fillets)
- Onions 2 pcs.
- Mushrooms champignons 200 - 300 gr.
- Pickled gherkins 4 pcs.
- Cheese hard 100 gr.
- Fresh dill and parsley
- Chicken broth 100 ml.
- Butter 50 g.
For marinade:
- Soy sauce 5 - 6 tablespoons.
- Oregano to taste
- Balsamic vinegar 1 tsp.
- Lemon juice 1 tsp.
- Mixture of peppers to taste
- Ground ginger 1 tsp.
- Olive oil 2 tbsp.
Preparation:
Mix the eggs with flour, sugar and salt, adding a little milk. Beat thoroughly whisk until smooth, so that there are no lumps. With a thin trickle, pour the remaining milk, and do not stop whipping our dough. Then add the vegetable oil and mix.
The dough for pancakes should be as thick as liquid sour cream, or as a very fatty cream, but in any case it should not be like water. The dough should be homogeneous, it should not have lumps, give a little to it to stand.
Bake on a hot skillet until golden brown.
Marinate chicken breast in soy sauce with seasonings. Leave for 30 - 60 minutes.
On a heated frying pan, for a minute, fry two halves of garlic with a twig of thyme, and take out.
We fry onion on this oil until it is transparent, we make fire stronger and introduce mushrooms, cut into small cubes.
Fillete it on medium heat until cooked.
Gherkin with chicken and cheese, cut into small cubes, mixed with onions and mushrooms. Just beat a little blender and add broth with finely chopped greens. Mix well and bring to taste.
We distribute the ready stuffing over the entire surface of the pancake, bend it from both sides of the edge and wrap it in a roll.
In butter, fry pancakes on both sides and serve with sour cream.
