Colette's Raw Raspberry Cheesecake

Ingredients

A bowl of mixed nuts and sesame seeds
Coconut flakes
Raspberries
Blueberries
4 Bananas
2 Lemons
1 cup of organic coconut oil

This is my mother's special recipe, firstly soak a selection of mixed nuts over night. Add some linseeds, sunflower seeds and sesame seeds then put them in the blender with a cup of coconut oil. Scoop out into one of those round baking tins with the push up base.

Then put three to four bananas in the blender with a cup of natural squeezed lemon juice and lemon rind. Scoop out and spread over the mixed nut and coconut layer base. Put in the Freezer to freeze for several hours or more.

To make the topping blend blueberries and raspberries together in the blender, then spread over the cheesecake when it is ready to take out of the freezer, add some fresh raspberries and sprinkle with coconut flakes to decorate. Easy peezy Lemon Squeezy
