The Lemon Breakfast Tart

The Story

We discovered an array of bright new breakfast possibilities after adhering to the raw food lifestyle for 30 days. Now, we're enjoying the most important meal of the day like rawkstars! These days, for breakfast, we enjoy homemade raw granolas. And raw chocolates! And raw ice creams!! Each of these options is vegan, relying solely on ingredients that are healthy and nutritious.

Today's recipe is inspired by @plantbasedmiri, who offered up the mouthwatering Raw Vegan Mini Lemon Cheese Cake. Thanks to her recipe outline, I was able to envision and customize a lemon tart that works well for our family's taste preferences, using ingredients we already had on hand, much to my wife's delight–lemony desserts are her favorite.

The Recipe

Ingredients: [Crust] 1 C cashews and 1/2 C dates. [Topping] 1.5 C cashews, 1 lemon, 1/2 C coconut cream, 1/4 C coconut oil, and 1/4 C agave nectar.

The perfect raw dessert crust can be made with two ingredients: nuts and dates. This recipe's topping is simple too!

Instructions: For your crust, chop your cashews with a food processor, and then add dates. Place this mixture into a springform pan and press it as shown. Place the crust in the freezer to set for a few minutes. Next, zest the lemon and squeeze the lemon juice, resulting in about 2 T fresh-squeezed lemon juice and 1 t lemon zest. Set aside the lemon zest for the end. In a food processor, mix the lemon juice with additional topping ingredients, blending to a smoothie texture. Pour this mixture onto the chilled crust, and then top with the zest. Refrigerate for a few hours, or overnight (ideally), and serve with your favorite berries on top.

Press your crust as shown here, and then pour in the topping.

After an hour of refrigeration, your lemon tart is solidified and ready to serve.

Yeah, raw desserts are so fun, right? This is one of the best! It's my 10th post about raw foods, after many many attempted recipes and new creations, and this one is unanimously 5-stars–my entire family loves it.

Yes! I have also made so many raw cakes and now I find them much more tastier than 'normal' cake ever was, also a lot healthier :D

Absolutely. I remember my first visit to a raw food restaurant in Manhattan. It was an ecstatic experience! We enjoyed a 2-hour meal, complete with a raw key lime pie for dessert, and there was a certain electricity in the feeling of it all, as if the food lit up our heartlights! Now that's the experience I work to create again and again with these raw food dishes.

Wonderful! Ah, raw desserts, how I love thee. Let me count the ways: (1) your feeling is sensational; (2) your flavor is delectable; (3) your nourishing is satisfying; (4) the smiles you bring are gratifying...

Our kids light up each time we have raw desserts! The only challenge is to "treat it like a treat," as opposed to an everyday offering, so we achieve this by creating a "norm" around the more ordinary breakfast options, like oatmeal, and we work to make each serving of oatmeal a treat too, with occasional chocolate chips on top. :)
