Quick Easy Delicious Dinner! Mussels & Salad!
Mussels are so yummy & easy to make
Making them with white wine & butter is my favorite! Just add that to the lists of why I could never go back to being vegetarian or would ever choose to be 💯 vegan! I love vegan food and I love eating raw especially but I also know life is short no matter your choices.
There are many ways to cook mussels, I think lots of people don't bother because it seems difficult however the truth is they are easy to make!
Here is what I used & you can totally use what you have or be extra creative. No need to be exact for a delicious turn out!
Mussels (I'm using 4lbs)
Herbs - I prefer fresh but I only had dry so I went with Cilantro, Basil & Bay leaf.
A whole sweet onion - I do prefer shallots when I have them
Fresh garlic - all your heart desires
White wine - I used two cups
Butter - I used a whole stick
Oil or Ghee for opening the flavor dry herbs- a couple table spoons was perfect
A large pot for steeming them (see what I did there)
First thing is opening the packaging and rinsing your mussels ..
Be sure to toss out any broken ones
Rinse them off with cold water & remove any beards luckily these ones were pretty clean.
The bearded part, I got lucky these were so clean
After rinsing heating the oil or Ghee then frying the herbs. After about a minute or two of heating I sprinkled the herbs in by breaking them up between my fingers sprinkling flavor and natural oils for maximum flavors. Think total salt bae
Next I add the garlic and get it nice and toasty
When prepping it I like to use make it easy to peel by using two metal bowls but I had to compromise with a lid.
You gotta shake them really hard to get the skin off but it's fun and way easier!
Instead of chopping I tossed the whole cloves in a mini food processor.
And the making them toasty
Add the onion next... When prepping them I like to Julianne the onions but you can chop them to your liking. Stir the pot!
Once you have a decent saute add your wine
Don't forget to drink some that's the best part!
Let everything simmer for about 5 min
Get that butter ready!
I like to put it in pieces for easy melting
Add the mussels and top with a lid
Stir them up a little ensuring they cook evenly mixing in the flavors
It really is that easy!
Next, eat them! Keep an empty bowl nearby for the shells. A salad a always a nice compliment as I always like to eat veggies. Bread is always great to soak up that yummy juice! I drank the rest of the white wine & @gomatthew enjoyed a nice sour brew.

I love oysters!! I didn't photograph the seafood soup I made for lunch but I will next time just for you because you are the BEST!! So easy hardly any work, was super bummed the store was out of clams but you will LOVE it!

White wine sauce is the best way to go with shellfish
I agree although I made a Tomato based shellfish soup today that blew my socks off! I don't usually like a Manhattan chowder but its the closest thing I can compare it to! I'll have to make it again so I can post it!
