Ingredients


For the cake:

  • 310 g flour + a little for sprinkling;
  • 1 teaspoon baking powder ;
  • 1 teaspoon of soda;
  • 1 teaspoon ground cinnamon;
  • ¾ teaspoon of salt;
  • ½ teaspoon ground ginger;
  • ¼ teaspoon ground nutmeg;
  • 340 g of butter + a little for lubrication;
  • 200 g of brown sugar;
  • 100 g of white sugar;
  • 3 eggs;
  • pinch of vanillin;
  • 120 ml of water;
  • 450 g carrots;
  • 200 g pecan nuts (can be replaced with other nuts for your taste).

For cream:

  • 450 g of cream cheese ;
  • pinch of vanillin;
  • 230 g of butter;
  • 900 g of powdered sugar.

Preparation



Mix the flour, baking powder, soda, cinnamon, salt, ginger and nutmeg. With a mixer, beat the butter and both types of sugar to a creamy state. In turn, add eggs to the oily mixture, whilst whipping thoroughly.

Add in the egg mixture vanillin, water and carrots, rubbed on a small grater. Mix well with a mixer. Pour flour mixture into it and mix until smooth. Grind half of the nuts, add to the dough and mix thoroughly.

Cover the bottom of the three molds with a diameter of 22 cm, grease with oil and sprinkle with flour. If you only have one shape, just prepare the cakes one at a time.

Distribute the dough into shapes and bake at 180 ° C for about 30 minutes. Check the readiness of the cake with a toothpick: it should go dry. After cooking, leave them in the form for 15 minutes, then carefully remove and completely cool.

Whip cream cheese and vanillin with a mixer. Gradually add small pieces of butter and continue to shake. In portions, pour the powdered sugar and whip the cream until smooth.

Slightly cut off the tops of two crusts so that the cake is more even. Place the first cake on the serving dish with a cut upwards and brush with a piece of cream. Cover with a second cut-off cake, grease it with cream and lay the third cake on top.

Lubricate the top and sides of the cake with cream. Press the remaining nuts into the cream on the sides of the cake. Before serving, put the dessert in the fridge for an hour.
